The Côtes de Provence sub-soil rep­ resents complex geology that is par­ ticularly conducive to wine-making. Two large geological areas coexist in Côtes de Provence: one, to the north and west, is calcareous and the other to the south and east is crystalline. The entire northern and western zones of Côtes de Provence are made up of alternating hills and limestone ridges sculpted by erosion. Further east, facing the sea, sit the crystal­ line Maures and Tanneron Mountain Ranges. This crystal series is formed in part of eruptive rocks. Wine Style Grape variety: • Primary Red Wine Grapes: Carignan, Grenache Noir, lladonner, Syrah, Mourvè­ dre, Cinsaut, Maccabeu • Blend of at least 3 grape varieties with the two main minimum 90% • Carignan maximum 60% • Syrah + Mourvèdre at least 20% • Maccabeu maximum 10% • Rosé wines: Maccabeu maximum 30% Red and Rosé wines Main grape varieties: 2 mandatory main grape varieties - grenache N, mourvèdre, cinsault, tibouren N, syrah (60% minimum from 2000, 70% minimum from 2005, 80% minimum from 2015) Secondary grape varieties: cabernet sauvignon (30% maximum), carignan (40% maximum), barbaroux, calitor. Characteristics Côtes du Roussillon reds: Full- bodied, fruity and spicy wine. Côtes du Roussillon rosés: Fresh flavors, echoes of small red fruit and flowers. Côtes du Roussillon Villages: Powerful and complex, and suitable for ageing. “The rosé wines display light to very light, brilliant, clear hues. Their nose offers aromas of fresh flowers (rose), yellow fruits (melon, peach) and red fruits (strawberry, raspberry, cherry), coupled with touches of citrus zest, tropical fruits and marshmallow. Their palate exudes a supple, round­ ed feel, counterbalanced by [varying degrees of crispness] depending on the vineyard site.
